Pico de Gallo
Ingredients 2 tomatoes, diced ¼ red onion, diced 1 jalapeño, minced Handful cilantro, chopped Juice of 1 lime Salt to taste Instructions Combine all ingredients in a bowl. Toss well and adjust seasoning. Let sit 10–15 minutes before serving.
Flour Tortillas
MAKES 6–8 small Ingredients 1½ cups flour ½ tsp baking powder 1 tsp salt ¼ cup butter, melted ½ cup warm water Instructions Mix flour, baking powder, and salt. Add melted butter and warm water; mix into a soft dough. Knead briefly until smooth. Rest dough 10–15 minutes. Divide into small balls and roll thin. Cook in a hot dry pan until lightly browned on both sides.
Refried Black Beans
Ingredients 1 can black beans, drained ¼ onion, diced 1 clove garlic, minced 1 tsp chili powder ½ tsp cumin Salt to taste Instructions Sauté onion and garlic until soft. Add beans and spices. Mash beans to desired consistency. Cook until heated through and slightly thickened. Adjust seasoning and serve.
Elote (Street Corn)
Ingredients 2 ears corn, roasted 2 tbsp mayonnaise 2 tbsp sour cream 1 tbsp lime juice 2 tbsp chicken stock ½ tsp sugar ½ tsp chili powder Salt & pepper to taste Optional: Onion & peppers (sautéed) Fresh cilantro Instructions Roast or grill corn until lightly charred. In a bowl, mix mayo, sour cream, lime juice, stock, sugar, chili powder, salt, and pepper. Toss corn in sauce (or brush on if serving whole). Top with sautéed vegetables and cilantro if using. Serve warm.
Chicken Fajitas
Ingredients 1 lb chicken, sliced 1 onion, sliced 2 bell peppers, sliced 1 tbsp oil Fajita Seasoning 1 tsp chili powder ½ tsp cumin ½ tsp oregano ½ tsp paprika ½ tsp garlic powder (or fresh garlic) Salt & pepper to taste Instructions Toss chicken with seasoning. Heat oil in a large pan over medium-high heat. Cook chicken until browned and cooked through. Remove. In same pan, sauté onions and peppers until tender. Return chicken to pan and toss to combine. Serve hot with tortil
