Elote (Street Corn)

Ingredients

2 ears corn, roasted

2 tbsp mayonnaise

2 tbsp sour cream

1 tbsp lime juice

2 tbsp chicken stock

½ tsp sugar

½ tsp chili powder

Salt & pepper to taste

Optional:

Onion & peppers (sautéed)

Fresh cilantro

Instructions

Roast or grill corn until lightly charred.

In a bowl, mix mayo, sour cream, lime juice, stock, sugar, chili powder, salt, and pepper.

Toss corn in sauce (or brush on if serving whole).

Top with sautéed vegetables and cilantro if using.

Serve warm.
