Strawberry Thumbprint Cookies

Yield: 50 cookies

1 cup (2 sticks) butter, softened

2/3 cup sugar

1/2 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup strawberry jam

1 cup powdered sugar

2 to 3 teaspoons lemon juice

Cream butter and sugar together until smooth. Add vanilla extract and then the flour. Shape into a cylinder form. Cut cylinder into equal pieces rolling each one into a smaller log. Cut 1-in pieces then place on parchment-lined. Using your thumb, make a small indent into each cookie. Fill with strawberry jam and then bake.

Bake at 350 degrees for 14-18 minutes or until edges are slightly brown. Drizzle with lemon glaze after they come out the oven. Let cool completely before removing and serving.
