Seasonal Fruit Cobbler: Nectarines

8 tablespoons butter

5 nectarines

1/4 cup white sugar

1/4 cup brown sugar

1/2 teaspoon ground cinnamon

1/8 teaspoon nutmeg

2 teaspoons cornstarch

juice of 1 lemon

generous pinch of salt COBBLER TOPPING:

1 cup all-purpose flour

1/2 cup sugar

2 teaspoons baking soda

2 pinches of salt

5 T butter

3/4 cup milk

Preheat oven to 350ºF.

Place the butter in a pie dish and place in oven until melted or in ramekins.

Meanwhile, in a large bowl, combine the nectarines, sugars, cinnamon, nutmeg, cornstarch, lemon juice and salt. Toss to combine.

In a separate bowl, whisk to combine the flour, sugar, baking soda, salt and milk. Remove pie dish from the oven and fill with the fruit mixture. Pour cobbler topping over the fruit.

Place in the oven and bake for approximately 1 hour, or until the juices are bubbling and the cobbler is golden.

Tent with foil if the cobbler is getting to brown.
