Lobster Filling for Ravioli

1 lobster tail (shelled and sauted in butter)
1/2 to 3/4 cup ricotta cheese
1 egg yolk
chives
salt and pepper
1/4 cup parmesan
Chop lobster tail to medium dice. Combine with remaining ingredients.
