Yield: 6 servings
1/2 pineapple, cored, peeled & chopped
1 mango, peeled, pitted, and chopped 1/2 red bell pepper, cored, seeded, chopped 1/2 red onion, chopped 3 T chopped cilantro leaves 3 T olive oil 1 jalapeno, or to taste, chopped 1 to 2 limes, juiced Kosher salt & ground black pepper to taste
Cut pineapple, mango, red pepper and onions, cilantro and jalapenos accordingly.
In a bowl, combine the pineapple, mango, bell pepper, onion, cilantro, olive oil, jalapeno, and lime juice. Season with salt and pepper and set aside.
