Octopus Ceviche

2 pounds of octopus

3 limes

1 red Onion

1cup cooked corn

1 cup red bell pepper, chopped

2 tomatoes, chopped

1/2 red onion, sliced

1/2 white onion

1 garlic clove

1 stack of celery

1 teaspoon oregano

Stems of cilantro

4 cups water


Make a broth with white onion, garlic, celery,oregano and salt and pepper. Once the broth boils shock the octopus or scare it 3 times, first hot broth and then the ice water. Then let it simmer in low heat for about 45minutes or until tender. Set aside and let cool.


Cook the corn in boiling water until tender about 10 minutes. Set aside and let cool.


Mix red onion, tomatoes, corn, juice of limes and chopped octopus. Drizzle some olive oil and adjust salt and pepper to taste.
