3 tablespoons butter
1 shallot, minced
3 cloves garlic, minced
1-15 ounce can cannellini beans
3/4 cup coconut milk
Salt and Pepper to taste
MELT butter, add shallots cook for one minute.
Add garlic cooked for another minute
Add beans and coconut milk, bring to boil. Smash the beans a little with a potato masher. For a smoother texture you can use an immersion blender.
Adjust seasoning to taste.
