8 oz grated cheddar cheese (or other cheese, blue cheese works great!)
4 tbsp unsalted butter, room temp
1 tsp salt
1 cup flour
2 tbsp ice water
Preheat oven to 350F
Mix cheese, butter and salt, it will be chunky. Add the flour. Add Ice water 1 tbsp at a time. Chill for 30 minutes. Roll out to 1/8 of an inch thick and cut into desired cracker shapes. Bake on parchement for 13 minutes.
