Cavatelli Pasta

Serves 2


1 cup flour

1/3 cup ricotta cheese

1 egg

1 tbsp olive oil

big pinch of salt


Combine the ricotta, egg, olive oil and salt in a bowl. Cut the mixture into the flour and continue to mix until it forms a soft, light dough.

Form the dough into 1/2 in thick ropes. Cut the ropes into small (1/2 in) pieces. Using a gnocchi board or fork, roll each piece against the ridges to form a ridge curl.

To cook, drop in boiling water and cook until they float, usually 2 to 3 minutes.

Serve with your favorite sauce!
