1 cup water
pinch salt
1 1/2 c flour
1 1/2 c JUST Egg liquid
10 Tbs Earth Balance or other vegan butter
1 cup shredded vegan shredded cheese such as So Delicious cheddar flavored shreds
Preheat oven to 375F
Bring the water and salt to a boil and add the flour all at once. Stir and continue to cook until a thin film forms on the base of the pan. Remove from heat and transfer to a stand mixer and beat until cool enough that steam no longer comes off the dough. Add the JUST Egg and vegan butter in three batches until combined. Stir in the shredded cheese. Use two large spoons to drop the dough in dollops on a parchment lined sheet pan. Give the gougeres plenty of space to expand . Bake for about 25 minutes, until expanded and lightly browned
