Jam Thumb Print Cookies

Ingredients-

  • 1 cup + 2 tbsp all-purpose flour

  • 1/4 tsp salt

  • 1/4 tsp baking soda

  • 1/8 baking powder

  • 6 tbsp unsalted butter cut into 6 pieces and softened

  • 1/3 cup sugar

  • 3 tbsp creme cheese softened

  • 1 large egg yolk

  • 3/4 tsp vanilla extract

  • 1/3 cup jam

Equipment:

  • rimmed baking sheet

  • parchment paper

  • medium bowl

  • whisk

  • electric mixer

  • rubber spatula

  • measuring spoons

  • oven mitts

  • cooling rack

Preheat oven to 350F. Line a rimmed baking sheet with parchment paper.

Combine the flour, salt, baking soda and baking powder. Set aside

Combine the softened butter with the sugar until light and fluffy. Add the cream cheese, egg yolk and vanilla. Add the flour mixture.

Roll the dough into 24 balls (about 2 teaspoons each). Place on the sheet pan and use your thumb to make an indentation in each one. Fill each indentation with a ½ teaspoon of jam. Bake until golden brown, 15-18 minutes. Allow to cool.
