Granola Bars

3/4 cup rolled oats

1/4 cup ground oats (process some rolled oats in a blender)

1/4 cup + 2 T sugar

1/4 tsp salt

1/8 tsp cinnamon

2 T each pumpkin seeds, coconut flakes, flax seeds (or other seeds)

1/4 cup dried cranberries (or other dried fruit)

1/4 chocolate chips

2 T honey

2 T melted butter

1/2 tsp vanilla

2 tsp water


Preheat oven to 350F. Spray a sheet pan with cooking spray.

Combine the oats, sugar, salt, cinnamon, seeds, dried fruit and chocolate chips in a large bowl. Combine remaining ingredients and pour over the dry ingredients.

Press into prepared pan and bake for 20 to 25 minutes, until lightly brown.

Remove from oven and while still hot, use a wooden or metal spatula to ease the granola from the edge of the pan. Allow the granola to finish cooling and then cut into bars.
