Fresh Corn Tortillas

2 cups masa harina

1/2 teaspoon salt

1 3/4 cups hot water

vegetable oil


Combine the masa harina with the salt and hot water. let stand for five minutes. Knead until the mixture comes together in a ball. Adjust the amount of water or masa until dough feels slightly dry, like play dough. Pull off a heaping tablespoon size ball. Roll out into a disk using a rolling pin or a tortilla press lined with a plastic bag to keep from sticking.


Heat a griddle or cast iron pan over medium high heat. Brush a small amount of oil on the griddle and place a tortilla on when hot. When edges begin to curl and small charred spots appear use tongs to flip it and cook the other side just until cooked through.
