Cornbread with Honey Butter

1 1/2 cups all purpose flour

1 cup cornmeal

1/2 cup sugar

1 teaspoon baking soda

1 1/2 teaspoons baking powder

2 tablespoons butter, melted

2 eggs

3/4 cup sour cream

1/2 tablespoon salt


Preheat oven to 350F and butter a muffin pan or cast iron skillet

Combine the flour, cornmeal, sugar, baking soda and baking powder. Stir in remaining ingredients until thoroughly combined. Pour into the muffin pan or skillet and bake until top is springs back when touched lightly in the center.


For the Honey Butter

2 sticks unsalted butter, softened

1/2 cup honey

1 teaspoon salt


Combine all ingredients and adjust seasoning to taste.
