Citrus Olive Oil Cake

Yield: 9” baking pan

3/4 cup sugar

2 ea eggs

1/3 cup olive oil

2 tsp vanilla extract

3 Tbsp citrus juice

1 Tbsp citrus zest

1 1/4 cup flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Powdered sugar for dusting

Combine sugar and eggs and mix until fluffly. Then add olive oil and vanilla followed by the citrus juice and zest. Combine dry ingredients (flour, baking powder, baking soda, and salt) in another bowl. Add half dry ingredients to wet and mix until just incorporated, then add remaining dry ingredients and blend again. Pour batter into prepared cake pan and bake 25 to 30 minutes in a 350 F oven.
