2 c long grain white rice
½ yellow onion
2 cloves of garlic
3 1/2 cups chicken broth
2 limes juiced
1 bunch cilantro
1 cup spinach
Directions- sauté onions and garlic in a little oil then add rice and 3 cups of broth bring to boil then reduce to low heat and cook covered for 15 to 20 minutes.
Take cilantro, spinach and 1/2 c of broth and blend when rice is cooked add to rice and juice the limes and mix around until evenly mixed and replace cover and let stand 5 minutes then serve.
