3 tbs creole seasoning
2 tbs butter
1 3-4 lbs chicken
salt and pepper
Preheat oven to 425
Season chicken with salt and pepper, set aside to come to room temp about 1 hr. mix seasoning with softened butter and after drying the chicken smear butter all over chicken.
Set on a rack on a half sheet pan and roast at 425 for 30 minutes, turning twice at 15 min intervals, after 30 turn oven down to 325 and cook another 30 minutes turning again at half way point checking temp 160 is what it needs to read and your done allow to rest 10 minute before you cut into it.
