Cajun Alfredo Sauce

Yield: 6-8 serv

1 shallot, minced

1/2 cup butter

3ea cloves garlic, minced

1 1/2 cup heavy cream

2 T Cajun seasoning mix (see below)

1/2 cup freshly grated parmesan cheese

Salt and pepper to taste

1 tbsp. smoked paprika

1 tbsp. garlic powder

2 1⁄2 tsp. salt

1 tsp. onion powder

1 tsp. cayenne

1 tsp. black pepper

1⁄2 tsp. dried thyme

1⁄2 tsp. dried oregano

½ tsp. brown sugar (optional)

Sauté the shallot in the butter until softened. Add the garlic and cook until fragrant. Add the cream and bring to a simmer. Once simmering, add the seasoning mix. Remove from heat and stir in the parmesan until melted. Do NOT return to heat. Add salt and pepper to taste.
