Brazilian Cheese Bread

Ingredients:

Vegetable oil spray

1 cup whole milk

1 cup shredded extra-sharp cheddar cheese

1 cup grated Pecorino Romano cheese

1/3 cup extra virgin olive oil

2 large eggs

1 tsp salt

2 cups tapioca starch

Equipment:

12 cup muffin tin

Blender

Dish towel

Rubber spatula

Oven mitts

Cooling rack

Butter knife

Preheat oven to 375F, grease the muffin tin.

Combine all ingredients except tapioca starch in the blender and blend until well combined. Add the tapioca starch and blend on high speed for about 30 seconds.

Pour into prepared cupcake tins and bake for 25-30 minutes.
