Berry Scones

Ingredients-

1 cup frozen mixed berries (or 1 cup frozen berries of your choice)

1 tbsp confectioner's sugar

1 1/2 cups all-purpose flour (plus extra for the counter)

6 tbsp unsalted butter cut into 1/2-inch pieces and chilled

2 tbsp sugar

1 1/2 tsp baking powder

1/2 tsp salt

1/2 cup whole milk

1 large egg yolk

Equipment-

  • Rimmed baking sheet

  • parchment paper

  • 3 bowls (1 large, 2 mediums)

  • rubber spatula

  • food processor

  • whisk

  • bench scraper

  • oven mitts

  • cooling rack

Preheat oven to 425F. Line a rimmed baking sheet with parchment paper.

Combine the berries and confectioners’ sugar, place in freezer until needed.

Combine the flour, chilled butter, sugar, baking powder and salt in the bowl of a food processor and process until butter forms pea size pieces. (Alternatively, you can do this by hand using a pastry blender or fork). Transfer to a large bowl, add the berries.

In a medium bowl whisk the milk and egg yolk. Add to the flour mixture to form a shaggy dough, do not over mix. Shape into 8 scones, transfer to prepared baking sheet. Bake about 14 minutes, until golden brown. Allow to cool before serving.
