Lentils with Caramelized Onions

Serves 4

Ingredients

  • 1 cup brown lentils, rinsed

  • 3 cups water or vegetable broth

  • 2 medium yellow onions, thinly sliced

  • 2 tbsp olive oil

  • 1 tsp kosher salt, divided

  • ½ tsp ground cumin (optional)

  • Freshly ground black pepper


Instructions

  1. Place the lentils in a saucepan with the water or broth. Bring to a boil, then reduce to a simmer and cook 20–25 minutes, until just tender. Drain any excess liquid.

  2. Meanwhile, heat the olive oil in a large skillet over medium-low heat. Add the onions and ½ teaspoon of the salt. Cook, stirring occasionally, for 25–30 minutes until deep golden brown and caramelized. Lower the heat if they begin to burn.

  3. Stir the cooked lentils into the onions. Season with the remaining ½ teaspoon salt, black pepper, and the cumin, if using. Cook together for 2–3 minutes until heated through.

  4. Taste and adjust seasoning before serving.
