Ginger Molasses Cookies

Yield: 30 cookies

1/2 cup melted butter

1/3 cup molasses

1 egg

1/2 cup packed brown sugar

2 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon ground cardamom

2 tablespoons chopped candied ginger

1/3 cup raw sugar (for rolling)

Whisk together melted butter, molasses, egg, and brown sugar. In a separate bowl, mix together all dry ingredients, then stir into the melted mixture. Roll dough into acorn size balls and roll in the raw sugar. Place on parchment-lined pan (about 16 per tray) and bake.

Bake at 350 degrees for 12-15 minutes or until edges are set and centers are still soft. Let cool completely before removing and serving.
