Pear Chutney

3 small pears (any type)

1/2 cup apple cider vinegar

3/4 cup brown sugar

1 shallot, minced

1 Tblsp fresh ginger, minced

1 tsp cinnamon

salt and pepper to taste


Combine the vinegar, brown sugar, shallot, ginger and cinnamon in a small saucepan and bring to a simmer. Simmer 5 to 10 minutes until a little thickened. Add the pears and simmer another five minutes, until pears are softened. Allow to sit for at least 30 minutes to blend flavors. Adjust seasoning.
