2 1/2 cups AP Flour
1 Tbsp baking powder
1/2 tsp salt
1/8 tsp pepper
1 cup extra sharp cheddar cheese cut into 1/4 inch pieces (4 oz)
1/2 cup shredded parmesan cheese (1 1/2 oz)
additional 1/2 cup of shredded parmesan
1 cup whole milk
1/2 cup sour cream
3 Tbsp unsalted butter, melted
1 large egg
Preheat oven to 350 and spray a metal loaf pan.
In a medium bowl, whisk together flour, baking powder, salt and pepper. Use a rubber spatula to stir in the cheddar and 1/2 cup of the parmesan.
In a large bowl, whisk milk, sour cream, melted butter and egg until combined.
Add flour mixture, batter will be lumpy. Scrape into the prepared loaf pan and sprinkle remaining 1/2 cup of parmesan over the batter. Bake 45 to 55 minutes. Allow to cool 15 minutes before serving.
